Ingredients

  • 12 oz pitted medjool dates (about 15-18 dates)
  • 2 cups boiling water
  • ½-1 cup alternative milk of choice
  • ½ teaspoon sea salt or to taste
  • ½ teaspoon vanilla bean paste or extract

Instructions

  • Soften dates - In a mixing bowl, add dates and boiling water. Cover and allow the dates to soften for 30 minutes or longer if the dates are very dry.
  • Mix ingredients - Drain the dates and transfer to a blender or food processor. Add half a cup of alternative milk or choice, sea salt, and vanilla bean paste or vanilla extract. Pulse until completely smooth. If you prefer a thinner consistency, add more milk and blend. Transfer to an airtight container, refrigerate, and enjoy within 2 weeks.
