These Dairy-Free Mashed Potatoes have all the creamy richness of classic mashed potatoes but without the milk or butter.

Peel then boil potatoes for 25 min, or until tender.

Step 1

Reserve 1 cup of broth then strain & mash potatoes.

Step 2

Add about a quarter cup of the reserved broth.

Step 3

Mix in minced garlic, garlic powder, kosher salt, & pepper.

Step 4

Fold in chives.

Step 5

Transfer to serving bowl then drizzle with olive oil and enjoy!
