Dairy-Free Mashed Potatoes
have all the creamy richness of classic mashed potatoes but without the milk or butter.
Peel then boil potatoes for 25 min, or until tender.
Reserve 1 cup of broth then strain & mash potatoes.
Add about a quarter cup of the reserved broth.
Mix in minced garlic, garlic powder, kosher salt, & pepper.
Fold in chives.
Transfer to serving bowl then drizzle with olive oil and enjoy!
